Ingredients
Mulard duck breast from Quebec.
The ducks are raised without vaccines or antibiotics (making the meat natural).
Our ducks are fed a 100% plant-based diet, with a high-quality corn content. The Mulard duck has a strong appetite and requires specific nutrition. The relationship we’ve built with farmers allows us to provide the best food for our animals.
Cooking Instructions
- Pan-frying: Place the duck breast in a cold pan, then heat over medium heat. Allow the fat to render gradually, removing the excess as it accumulates. For medium-rare: cook for 8–10 minutes skin-side down, then 2–3 minutes on the flesh side. For well-done: cook for approximately 15 minutes on each side, taking care not to dry out the meat.
- Oven-roasting: You can start by pan-frying the breast to brown the skin, then finish cooking in the oven at 180°C, adjusting the time based on the thickness of the meat.
